    Chef Garcia states, “My culinary philosophy is about creating flavorful, simple, and authentic dishes, built around fresh, sustainable ingredients, and presented in ways that balance tradition with modern innovation.” He adds that this philosophy is evident in a menu rich with bold, Mediterranean-inspired flavors that embrace local, seasonal ingredients, offering diners an unforgettable experience that reflects both Mediterranean culture and the distinct culinary landscape of Fort Lauderdale.

    The authenticity of Olive & Sea’s offerings is prominent, featuring vibrant ingredients such as za’atar, harissa, Aleppo pepper, Urfa pepper, and shawarma spice. These spices add complexity and warmth to signature dishes like Moroccan Stew and homemade falafel, which is accompanied by a zesty preserved lemon aioli.

    Under Chef Garcia’s direction, guests can also indulge in new menu highlights including pan-roasted red snapper with squash purée and arak fennel broth, spice-crusted hanger steak served with za’atar fries and zhug, smoked eggplant laffa pizza topped with mozzarella and Urfa pepper, and beef lahmajun with Antep pepper and garlic cream.
