    HaSalon Restaurant Opens In W Aspen Hotel

    Residents of Aspen are eagerly anticipating the launch of HaSalon, the new dining establishment at the W Aspen hotel. Set to open its doors in mid-December 2024, this innovative Mediterranean eatery is being introduced to Colorado by the internationally acclaimed Israeli chef Eyal Shani. The immersive culinary experience aims to challenge traditional boundaries and deliver surprising flavors.

    “HaSalon Aspen is transforming the local dining landscape, perfectly resonating with the passion and spirit that W Hotels embodies,” remarked Martin Magdeburg, General Manager of W Aspen. “The culinary offerings at HaSalon will be beautifully paired with the inventive mixology crafted by Dushan Zaric.”

    Zaric, a celebrated mixologist recognized for his contributions at the Employees Only bar concept, will unveil a new bar experience named Hidalgo. Drawing inspiration from Aspen’s lively ingredients, Hidalgo will feature an array of artisanal agave cocktails.

    Positioned on the lobby level in the sought-after grotto of the hotel, Hidalgo will become a permanent attraction at W Aspen. Guests can start their experience with a Pine For Aspen cocktail which includes Bombay Gin, Becherovka, lemon juice, a syrup infused with pine needle leaves, and a Fernet Branca spray. A sprig of rosemary garnishes this drink for an added aromatic element.

    The bar’s menu will also showcase reimagined classic cocktails such as the “Improved Margarita Cocktail” and “Yellow Jacket,” all crafted from fresh ingredients. The bar will operate Thursday to Monday, starting at 6 p.m.

    Diners at HaSalon will be treated to warm, freshly baked squares of golden focaccia adorned with roasted tomatoes and red onion, lightly sprinkled with sea salt. According to restaurateur Erica Pulicicchio, the cuisine emphasizes natural flavors, while Chef Eyal’s culinary team enhances guests’ experiences with narrative-driven menu guidance.

    Among the standout dishes is the fennel ribbons paired with avocado slices, dill, and poppy seeds, lightly dressed to bring out the flavors. Another feature is the charred beet carpaccio served with crème fraîche and shaved horseradish, beautifully balancing the earthy sweetness of the beets.

    HaSalon’s shareable plates include options like baby potatoes topped with Osetra caviar, bluefin tuna, and ribeye steak. Pasta aficionados can relish signature offerings such as green rigatoni, ricotta-stuffed pasta pillows, and spaghetti enhanced with Ossetra Caviar in a San Marzano tomato sauce.

    Chef Eyal’s culinary portfolio encompasses over 46 renowned restaurants worldwide, making HaSalon in Aspen a destination for food lovers. Guests are particularly fond of the Bourekas filled with a delightful mix of spinach, comté, ricotta, and parmesan, served warm alongside an Israeli salad and crème fraîche.

    To cap off their meal, patrons can indulge in the Pistachio olive oil cake with raspberries, or select from other beloved desserts such as Basque cheesecake and sorbets. Located at the base of Aspen Mountain, W Aspen provides year-round entertainment at its Rooftop bar, offering breathtaking mountain vistas.

    The contemporary suites at W Aspen reflect the town’s rich heritage, from its mining past to its current reputation as a skiing hub.
