Siempre Tequila consistently impresses with their innovative tequila expressions, and their latest release, the Supremo Blanco is no exception.
The Supremo Blanco is a traditional project that will appeal to those who appreciate high-proof spirits. The process starts with the selection of premium agaves, which are then baked in traditional brick ovens using steam for heating. The cooked agaves are crushed using a tahona and the resulting juice undergoes wild fermentation, without the addition of any yeast, allowing nature to take its course.
After fermentation, the liquid is distilled twice in alambique stills, and the heart and a significant portion of the distillate’s tail are collected and bottled at full strength.
Having had the opportunity to sample the Supremo Blanco, I found the nose to be vibrant with notes of agave, fruit, minerals, and a hint of hay, providing a clean aroma without the strong alcohol presence often associated with a 110 proof Blanco.
On the palate, the Supremo Blanco offers flavors of sweet agave, saltwater, and jalapeño, with a long finish. While I personally prefer the fruity nose slightly more than the salty-spicy flavor profile, both aspects are of high quality.
I eagerly anticipate Siempre’s future releases, as each expression they introduce continues to exceed expectations and deliver excellence.
